Amarosa Potatoes
When our horticulture committee needed to choose a potatoe, Amarosa easily won. It is a fingerling with smooth rasberry-colored skin and sweet, creamy red flesh that resists fading during cooking. Fingerling potatoes are quicker to grow and require less space and soil - so you can grow them in the ground or in a large container.
They are perfect fried, baked, boiled, steamed or as mouthwatering pink chips. Pink potato salad is guaranteed to add interest!
We chose the best herbs to accompany new potatoes - a little butter, olive oil, or nut oil will elevate a dish of boiled potatoes to a fine dining experience. We also chose herbs that will not compete with the potatoes so they will grow together very happily.
